This is tough to put in words. If you have discord, I could show you how I've gotten around this. It involves using the same angled track with one curve starting with a shorter straight track piece allowing the two single pieces to meet up and match the double track perfectly despite a middle platform being present.
What's always worked for me is to lay my double-track about 200M beyond the station so that I have a targeted endpoint that's on the right alignment, and then remove track where the platform is to build the shift around it.
Inside the gap... it depends on if you're shifting on only one side around the platforms or both. I tend to run one straight and the other jogged.
On commuter tracks, a pair of 1500r 2.5d pieces back to back and then the same on the other side of the platform has worked well enough for my tastes. For subway or tram, I've used 800r 05ds back to back but it's a rough ride for larger cars. High speed rail might need a pair of 3000r 1ds with a straight section in the middle...

So the method here is to basically mirror the track pieces so they align back after the curve? This is another problem, it's an odd shaped platform that I've followed as shown below, so the pieces aren't uniform. I've considered just laying single track parallel, but then realised I won't be able to use crossovers,
Yeah, that's a little more difficult. Smaller radius curves to line up with the double track and then a straight or curve about 10 meters smaller in radius at the platform...

So this is where the tough part comes into play, you could sacrifice and use dynamic track piece, or experiment with each angle at each degree to get it as close as possible to the platform. Worse comes to worse, you'll have to make your own platform with blender or sketchup. I have not dove into making shapes yet.
